How do I know the total number of cards in play?
This is an estimate. Look around the room. Count the number of players (e.g., 50) and estimate the average number of cards they have (e.g., 6). Total = 50 * 6 = 300 cards. Some online bingo sites display the active card count explicitly.
Does the type of game (75-ball vs 90-ball) change the odds?
Surprisingly, no. While the length of the game changes, the probability of who wins depends solely on the distribution of cards. If you hold 10% of the cards, you have a 10% chance of winning, regardless of whether it is 75-ball or 90-ball.
